Speedup  Fermentation For Idli Batter In Winter When the batter is not fermented,especially in winter, I have used dry yeast (dissolved in warm water with a tsp of sugar,allow this mixture to froth ,it will take 10-15mins)mixed in batter just 2-3 hrs before steaming Idlis.This method yields soft and fluffy ones.The taste remains the same.

Tips to dry roast red chilli and coriander seeds or coconut. Dry roasting is very easy in microwave. You can dry roast coriander seeds,channa dhal and fenugreek in the same microwavable plate for 1 minute or till you get the smell of coriander seeds. Chilli has to be microwaved separate for 50 seconds.Don't open the microwave for 5 minutes after that since the fumes of chilli will spread outside. .....
