Bharwan Baigan is a unique exotic dish. In this dish baby eggplants are slit and stuffed with spicy onion masala.


  1. Baingan round-medium-2no.
  2. Salt/pepper to taste
  3. Onion-diced-20gm
  4. Capsicum-diced-20gm
  5. Cheddar cheese-30gm
  6. Yellow pepper-diced-20gm
  7. Red pepper-diced-20gm
  8. Tomato-chopped-40gm
  9. Olive black-4no.
  10. Sugarv - 1/4 tspn
  11. Lemon juice-15ml
  12. Oil-10ml

Step By Step Method

  • Step 1. Wash and slit the brinjal into two. Carefully scoop out each half leaving ¼” layer.

    Step 2. Stuffing: Heat oil in a non stick pan, sauté onion, tomatoes, peppers & seasoning. Cook till done.

    Step 3. Now add sugar, lemon juice & olives. Toss well.

    Step 4. Fill the stuffing into each brinjal and top with grated cheese.

    Step 5. Pre heat the Air fryer at 180° C for four minutes. Lightly coat the fryer basket with oil.

    Step 6. Keep the brinjals in the basket and lightly brush with oil. Air fry at 180° C for 7 minutes. or till the cheese melts.

    Step 7. Serve hot.
