Bhuna is a cooking process where spices are cooked in oil to bring out their flavour. Chicken bhuna is a simple recipe of diced chicken marinated with sauce and yoghurt, a classic chicken recipe.


  • 500 grams chicken, cut into small pieces
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper powder
  • 2 tsp red chili powder
  • Salt to taste
  • 2-3 tsp Ginger- garlic paste
  • 2 tsp garam masala
  • 3-4 tbsp of mustard oil
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 Lemon
  • 2-3 tbsp yogurt
  • 5 tbsp fresh coriander
  • 1 bay leaf
  • 1 stick cinnamon 
  • 1 star anise
  • 4-5 no.s of black peppercorns
  • 1 sliced onion (medium)

Step By Step Method

  • Step 1. In a bowl add turmeric, black pepper powder, chili powder, Salt, ginger-garlic paste, garam masala, mustard oil, cumin powder, coriander powder. Squeeze in lemon juice and mix well.

    Step 2. Add in the Chicken to the mixture and let it marinate for 2 hours or 15 mins.

    Step 3. In the meantime, heat the pan and add mustard oil, bay leaf, cinnamon, star anise and few black pepper corns. Add the chicken mixture and cook for 3-5 minutes. 

    Step 4. Add in the sliced onions and stir well.

    Step 5. Finally, add the yogurt, fresh coriander and mix well. Allow it to cook for 3-5 minutes. Garnish with fresh coriander and serve
