Tofu Potato Breakfast Burrito

An amazing breakfast recipe made with Tofu and Potatoes. This recipe is sure to be a hit among kids.


Ingredients

For Tofu Bhurji

  • oil - 1.5 tsp
  • mustard seeds - 1/4 tsp (kadugu)
  • urad dal - 1 tsp (ulutham paruppu)
  • onion - 3/4 cup - chopped
  • bell pepper - 1 cup - chopped
  • green chilly - 3
  • tomatoes - 1 small
  • tofu - 1.5 cups - scrambled
  • turmeric - 1/4 tsp
  • chilly powder - 1/4 tsp
  • cumin seeds - 1/2 tsp (jeeragam)
  • potatoes - 2 cups - diced
  • salt - to taste

 

For Burrito

  • burritos - as needed

Step By Step Method

  • Step 1. Heat oil and add cumin seeds.

    Step 2. Add potato, salt and chilly powder.

    Step 3. Sprinkle some water and allow the potatoes to cook.

    Step 4. Potatoes are cooked.

    Step 5. Prepare the tofu bhurji by tempering mustard seeds, urad dal in oil, saute onion, green chillies, tomatoes along with the bell peppers, scrambled tofu and turmeric. Keep aside and let it cool down.

    Step 6. Take a burrito. Spread the bhurji and potato mixture.

    Step 7. Top with some cheese.

    Step 8. Fold the sides.

    Step 9. Roll into a burrito.

    Step 10. We like our burritos grilled. To grill, I normally place the burrito in Prestige Cute Sandwich Toaster.

    Step 11. Grill till golden brown. Tasty burrito ready.
