Cashew chicken gravy is an Indian recipe that features thick cashew flavored gravy with butter, milk and spice blends such as cinnamon, pepper powder, green chili. Best served with rotis and naan.


200 grams boneless chicken 1 cup Finely chopped onion 1 tsp Ginger garlic paste 4 Green chilis 50 grams Cashew 2 tbsp Melon seeds 1 cup Milk 1 tbsp Curd 1 inch Cinnamon 1/4 tsp Pepper powder 1/4 tsp Garam masala powder 1/2 tsp Sugar 2 tbsp Butter 2 tbsp Oil Chili flakes and mixed herbs to garnish Salt to taste

Step By Step Method

  • 1. Soak melon seeds and cashew in a bowl of warm water for 10 mins. 2. Grind the melon seeds and cashew to smooth paste. 3. Marinate chicken with ginger garlic paste, curd, pepper powder and salt for 10 mins 4. Saute the marinated chicken with 1 tbsp butter for 5 minutes 5. Heat oil and butter in a non stick pan. Add cinnamon stick, finely chopped onion and fry for a minute. Add ginger garlic paste and fry for 30 seconds 6. Then add chicken and saute for 2-3 minutes in a medium flame. 7. Add pepper powder and 2 slit green chillis and stir. 8. Add cashew paste, stir and add milk and water. 9. Add salt and cook for 5 minutes. 10. Add garam masala powder, stir and add sugar.
