A very spicy and tasty snack ,but usually popular as breakfast also among some part of south Indians. Unique combination of curd (preferably sour curd),green chilli and rice flour. A truly satisfying dish. Can be accomplimented with anything from tomato sauce to a pudina chutney . A dish which gives scope for a lot of varieties to work with keeping this as a base.


INGRIDIENTS : rice flour - 1qty (cup) sour curd in buttermilk consistency[i.e-sour curd mixed with water] - 1.5qty (cups) salt as required green chilly paste as per taste[here, 1-2 teaspoons} oil - two teaspoons for boiling and for deep frying chopped coriander leaves.


Kadai for deep frying. Making bowl for making the dough. Plank for rolling out the dough. Mixer grinder for making the chilli paste.

Step By Step Method

  • PROCEDURE : Firstly in a vessel add the sour curd (in buttermilk like consistency), salt, green chilli paste and two teaspoons of oil.Bring it to a boil. After it comes to a boil, simmer the flame. Add the rice flour into the vessel and again boil it for 15 minutes. After boiling for 15 minutes, turn off the flame.With the help of a mixing stick or with the back of a spatula, keep mixing the mixture in the vessel until the flour and the curd mixture combines together and forms a dough like texture. remove the spatula or the mixing stick ,add coriander leaves, mix well with hand and make it into a semi-firm ball of dough. Next, divide the dough into medium sized balls and roll it out into thick rings. In a deep frying pan, heat oil for deep frying.Once the oil is hot enough, add the rolled out rings into the oil and fry it until golden brown. remove it into a plate with tissue paper to drain the excess oil and serve hot. TIPS : 1.the dough after mixing should be firm and not too sticky. 2.In case if it is sticky,add a little rice flour to it and mix it to avoid moisture. MY INNOVATIVE VARIATION INTO THIS RECIPE : A half a teaspoon of red chilli-garlic chutney or pudina chutney can be added and mixed with portioned out balls of dough and then can be rolled out into rings and deep fryed. it gives a different and unique taste.
