Raw jackfruit is less known very healthy,fiber rich and low glycemic index whole some vegetable. In our coastal region,we start using jack from its very tender form.we have so many traditional recipes.Apart from that we even enjoy this one pot meal and it is a very good option for tiffin boxes for lunch.


Basmati rice 3 cup Ghee 4 spoons Raw jack pieces 1 big bowl Bay leaf 2 Shahjeera 1 spoon Cinnamon 1"piece Clove 4 Cardamom 2 Star anise 1 Turmeric powder 1/4 spoon Salt to taste Onion 2 Green chilli 4 Ginger garlic paste 1 spoon Curd 1 small cup Biryani masala 3 spoons Pudina 3 spoons (chopped) Coriander leaves 3 spoons (chopped)

Step By Step Method

  • Wash basmati rice and soak it 5 minutes Chop young jack into bite size pieces by removing outer skin and inner pith and soak this in a bowl of water. Ready all the ingredients Now take one cooker ,keep it on stove for heating. Add ghee,bay leaf, shahjeera , cinnamon, cardamom, clove & star anise. Next add chopped onion and fry it until it becomes light brown. Add ginger garlic paste and fry until its raw smell vanishes. Now add coriander leaves, pudina, jackfruit pieces and mix nicely. Add turmeric powder, biriyani masala & mix. Add curd & salt and mix nicely until masala coats the jackfruit pieces. Now add drained rice & fry for a while, add sufficient water(6 cups) and check for the salt. When it starts boiling, close the lid and cook until 2 whistles. When pressure relives, serve this with raita. Note : I usually use 2 cups of water for 1 cup basmati rice.
