Sweet n' Spicy Red Hot Pizza

Outside the culinary world, red is the color which signifies the sweetness of love. Come to food and red is the color of chilies, which add the element of hotness to food. Sweet and hot is a combination which sets the taste buds on fire, and at the same time soothes them, thereby making for an involved culinary experience. These two flavours are also tied together through the color of red, when derived from strawberry and red chilies. These are the two ingredients we bring together on top of a pizza base seasoned with freshly ground pepper to create this unique packge of flavours in a pizza.

For pizza base: All purpose flour (maida) - 300gm Baking Powder - 1 tbsp Baking Yeast - 7gm sugar - 1 tsp Freshly ground pepper - 1 tbsp Salt - to taste Olive Oil - 4 tbsp Water - About 200ml For Toppings: Mozzarella Cheese (100gm) American Garden Red Chillie Sauce (3 large spoonfuls) Strawberries (8-10) Pickled capsicum and onion Olives

1. Prestige POTG 20 L 2. Pizza stone. I have used marble chakla for a pizza base, but any pizza stone would do

Step By Step Method

  • Preparation of dough for base: 1. Activate the yeast in a sugar solution and use it to water the dough. Add freshly ground pepper, salt and baking powder to the dough and use olive oil to further smoothen it. 2. Knead the dough until it becomes flexible enough to form a thin film-like layer of dough when pulled and stretched with both hands. 3. Put the dough in a deep vessel, cover with muslin cloth and place in refrigerator for 5-6 hours. The dough will expand to 3-4 times in size due to action of activated yeast. At the time of baking: 1. Place your pizza stone in an oven and heat it at 250 degrees for about 15 minutes. 2. While the stone is getting heated, flatten your dough just like you do a roti. Also, grate the mozzarella cheese and keep it aside 3. Once the stone is heated, take it out and spread the flattened pizza base on it. It will immediately start cooking due to the heat radiating from the base. Spread chillie sauce on it generously and sprinkle grated cheese on it. 4. Place pizza toppings - strawberry, olives, pickled capsicum and onions on top of it. Add some salt and pepper and sprinkle some olive oil on top of the pizza for additional richness of flavour. 5. Put away in the oven to heat at 200 degrees for about 20 minutes. After 20 minutes, take the pizza out and cut slices using a pizza cutter and serve hot.
